COURSE CONTENT
Digestion: Secretion of digestive enzymes. Biochemical role and mechanisms of activity of digestive enzymes. Regulation of synthesis and secretion of digestive enzymes. Regulation of pH in the digestive system. Intracellular and extracelluar transport of digestive enzymes' products. Antinutrients and inhibitors of digestive enzymes' activities. Food intake regulation: Biochemical factors that participate in the creation of the sense of hunger and their mechanism of action. Biochemical changes in food: Action of exogeneous and endogeneous enzymes in food and their application in food processing. Adverse effects of enzyme activity in food. Allergenes in food. Immunologic reactions in gut.
