COURSE DESRIPTION:
Classification and chemistry of phytochemicals. The most important natural sources of phytochemicals. Industrial application of phytonutrients: as a food additives, nutraceuticals, producing functional food,
bio-pesticides etc. Mechanism of antioxidative and antimicrobial activity, and influence of chemical structure on the biological properties. Bioavailability of phytonutrients; potential health-promoting effects in human. Process of extraction and concentrations. Advances in microencapsulation of oil and PUFA.Identification and detection methods. Producing of fortified food products. Novel technologies of production functional food, food supplements, nutraceuticals.
