COURSE CONTENT
Natural sources of phytochemicals from different plants (fruit, vegetable, cereals, wine, medicinal and aromatic herbs, cocoa products, teas, coffee). Classification of phytonutrients and stability during processing (influence of temperature, oxygen, light, etc.) and storage of products. Synergistic influence of phytonutrients. Potential health benefits of phytonutrients and basic mechanisms of action. Importance of phytonutrients in diet and prevention of different disease. Examples of preventive and therapeutic action of phytonutrients from natural sources, obstipation, cardiovascular disease, high blood pressure. Recommended daily intake of phytonutrients.
