					Iva Sabljak Doktorski rad: Sažetak: Zbog klimatskih promjena i potrebe za smanjenjem ukupnog utjecaja na okoliš, održivost je postala jedan od ključnih aspekata. Visoke stope proizvodnje u kombinaciji s neadekvatnim tehnikama obrade u prehrambenoj industriji, ne samo da povećavaju emisije stakleničkih plinova, već stvaraju i ogromne količine otpada. Cilj ovog istraživanja bio je procijeniti sveukupni potencijal korištenja kore cikle nastale kao nusproizvod u proizvodnji pasteriziranog povrća prethodno obrađenog pulsirajućim električnim poljem, i to, primjenom ultrazvučne i klasične toplinske ekstrakcije betaina i vlakana iz kore cikle te procjenom životnog ciklusa procesa i proizvoda, kao i njihovog utjecaja na okoliš. Ekstrakcija pomoću ultrazvuka visoke snage imala je veći prinos ukupnih prehrambenih vlakana i betaina u odnosu na klasičnu toplinsku ekstrakciju, što potvrđuje njezinu veću učinkovitost. Ekstrakcija pomoću ultrazvuka visoke snage rezultirala je manjom potrošnjom energije i smanjenjem emisija CO2 u usporedbi s klasičnom toplinskom ekstrakcijom.



Abstract: Due to climate change and the need to reduce the overall impact on the environment, sustainability has become one of the key aspects. High production rates combined with inadequate processing techniques in the food industry not only increase greenhouse gas emissions, but also create huge amounts of waste. This research aimed to estimate the overall potential of using beetroot peels originated as a by-product in the production of pasteurized vegetables pre-treated with pulsed electric field, using ultrasonic and conventional extraction of betaine and fiber from beetroot peels and assessing the life cycle of the process and product, as well as their impact on the environment. Ultrasound assisted extraction resulted in a higher yield of total dietary fiber and betaine compared to conventional thermal extraction, confirming its greater efficiency. Ultrasound-assisted extraction resulted in lower energy consumption and reduced CO2 emissions compared to conventional thermal extraction.
