Description:
Factors affecting the relationship between human and food. Legislation in Croatia and the EU concerning the labeling and advertising of food and consumer protection. Models of consumer behavior. The perception of quality in consumers. Trends in nutrition and dietary habits. Segmentation of consumers with regard to dietary habits. Consumer confidence in the supply chain. Beliefs related to the way of food production. National and international research results regarding the relationship of consumers and food labeling. Food policy as a result of dietary behavior. The basic principles and the principles of consumer behavior in relation to food safety (examples and reasons for the current situation and trends). The perception of consumers in relation to food safety in the food chain: case studies. Through seminars, field work (field exercises) contribute to a better understanding of the complex relationships between the consumer, nutrition/food and health.
