Description:
The objective of this course is to introduce students with sensory attributes and the way we perceive them and with various sensory evaluation methods using appropriate statistical tools. Students will also be familiar with the guidelines for scientific approach to sensory analysis and the basic principles of selection, training and monitoring of sensory assessors. Within the module, students will acquire skills for independent application and intrepretation of sensory tests, and evaluation of candidates' ability for sensory analyses. The adopted skills will be used to assess sensory properties of food by applying scientific principles in terms of space, protocol, analysis and interpretation of results.
