Description:
Objectives of the course: To acquire knowledge of the exotic fruits important for the food industry and their main products, taking into account their increasing popularity, i.e. supply and demand on the market. Introduction to the main types of exotic fruits that are industrially processed, with their botanical characteristics, chemical composition and nutritional value. To provide knowledge about the industrial processing of exotic fruits and the main products, their chemical composition and nutritional value, as well as the quality parameters of the final products.
