Thesis "Plasma levels of natural antioxidants in groups of population from different geographical areas." Ph. D. in Physiopathology at the University of Pavia.Thesis “Red-ox modulation of oxidative stress by phenolic compounds: mechanism of action and effect on cell-mediated immune function”1992 – 1993: Post-Graduate Research Assistant in the Unit of Human Nutrition at the National Institute of Nutrition of Rome; Research projects: Assessment of human red-ox status by biochemical indexes.

1994 - May 1997:Post-Graduate Research Fellow at the Unit of Human Nutrition in the National Institute of Nutrition, RomeResearch Projects: Dietary modulation of oxidative stress by phenolic compounds.

June 1997-June 1999 : Visiting scientist at the Nutritional Immunology Laboratory at the Jean Mayer USDA Human Nutrition Research Center on Aging at Tufts University, Boston USA. Advisor: Prof. Simin Nikbin Meydani. Research Project: Red-ox modulation of the cell-mediated immune response in ageing.
