COURSE CONTENT

  • Phytochemicals ad their possible role in health protection
  • Glucosinolates and their breakdown products in Brassica plants
  • Polyphenolics
  • Carotenoids
  • Phytoestrogens

LEARNING OUTCOMES

  • classify basic phytochemicals in different herbal materials and factors that influence the chytochemical omposition and  content in plant food
  • describe mechanisms of action as well as absorption, metabolism and bioavailability of certain phytochemicals
  • define oxidative stress, reactive species that cause it as well as antioxidant action mechanisms
  • explain the role of phytochemicals (glucosinolates, polyphenols, organosulfur compounds, carotenoids, phytoestrogens, melatonin) in the disease prevention
  • describe phytochemical interactions, endo-interactions and exo-interactions and synergistic effects.
  • state the impacts of home food preparation on phytochemical changes in composition and content
