COURSE CONTENT
- Phytochemicals ad their possible role in health protection
- Glucosinolates and their breakdown products in Brassica plants
- Polyphenolics
- Carotenoids
- Phytoestrogens
LEARNING OUTCOMES
- classify basic phytochemicals in different herbal materials and factors that influence the chytochemical omposition and content in plant food
- describe mechanisms of action as well as absorption, metabolism and bioavailability of certain phytochemicals
- define oxidative stress, reactive species that cause it as well as antioxidant action mechanisms
- explain the role of phytochemicals (glucosinolates, polyphenols, organosulfur compounds, carotenoids, phytoestrogens, melatonin) in the disease prevention
- describe phytochemical interactions, endo-interactions and exo-interactions and synergistic effects.
- state the impacts of home food preparation on phytochemical changes in composition and content
