Course Description

Development of new generation of probiotics and prebiotics. Probiotic and prebiotic mode of action.  Taxonomy, physiology and definition of functional starter cultures. Production of functional metabolites by lactic acid bacteria. Metabolic engineering of lactic acid bacteria for the production of nutraceuticals such as B-vitamins, low-calorie sweeteners, exopolysaccharides, digestible soy-galactosides etc. Bacteriocinogenic probiotic strains and functional starter cultures in improvement of food safety and quality. Technological aspects related to functional starter cultures application in fermented food production.
