Importance of quality and quality assurance in food business. Institutional framework for the adoption of food legislation. Overview of Quality Management System and Food Safety. Prerequisite Programs and HACCP System. Food management systems (ISO 9000 standard). Food Safety Management System. Quality System Certification. Accreditation of the laboratory. Quality Management System Audit. Quality system documentation.
